Cold, Creamy Crab and Snow Pea Dip

With spring in full bloom, I wanted to create a recipe for something that would be good for a sunny-day picnic in the yard (even though I live in a city apartment and don’t have a yard. *sigh* Some day…). But, whether picnicking in the yard or a downtown park, this creamy crab dip with some veggies, crackers, or a sliced baguette makes the perfect snack for sharing with a loved one or two.  It’s filling, refreshing, and oh-so-satisfying.

Recipe Notes:

  • Crab Type: My favorite crab to use for this is pre-prepared lump crab meat that you can get in the fresh fish section of many grocery stores. It’s already cooked and shredded and makes preparing this kind of a dish super quick and easy, like dumping out a can of tuna for tuna salad. However, this type of crab can be a little pricey. So, if you don’t mind the flavor and texture of imitation crab, that is certainly usable (and much more friendly for your wallet). Or, you can go for claw meat, which is often sold pre-prepared next to the lump crab meat and is somewhere in-between for price. One last option, if you’re more skilled and have more time on your hands than I do, is to cook your own crab. If that’s the route you’d like to take, then I wish you luck!

  • What To Eat It With: My absolute favorite thing to scoop up this dip with is some crunchy toasted baguette slices.  The cold creaminess of the dip and the crunch of the toast is just delicious.  However, I’ve found that it’s also super great with baby carrots (though slightly harder to scoop, as it’s a rather thick dip, akin to a crab salad), cucumber slices, tortilla chips, and a variety of crackers.  I think this would be an excellent centerpiece for a charcuterie board of sorts! And, since it is basically a crab salad, it’s also delicious in a sandwich.
