Makin’ Bacon Pancakes with Peanut Butter Sauce

Looking for a healthy breakfast idea?  Well, you might want to keep looking, haha!  These sweet and salty American-style pancakes studded with thick bacon and drizzled with rich peanut butter sauce are the perfect treat to go with your next weekend Adventure Time binge.  We’re makin’ bacon pancakes, everybody!

Recipe Notes:

  • Bacon: I use a thick-cut bacon, because a thinner bacon tends to get a bit lost in the pancakes.  The thick bacon ensures that you get a great bacon taste and texture in every bite, so you KNOW these are BACON pancakes!  I also place pieces of the bacon into the pancakes as they’re cooking in the pan rather than mixing it into the batter because this lets the bacon directly touch the pan as the cakes are cooking, giving them even more crispness rather than getting softened by the batter.

  • Batter: This batter makes thicker, American-style pancakes that are well-risen with baking powder.  Just make sure not to overmix the batter, otherwise the pancakes will come out chewy rather than soft and fluffy.  It really is okay to have some little lumps in the batter, as weird as that may seem.

  • Sauce: This peanut butter sauce is literally as easy as popping something in the microwave, and I think it elevates the dish by bumping up the sweet and salty flavors.  I definitely recommend making it with pure maple syrup (not maple-flavored “pancake syrup”) to get that deep maple flavor rather than just the sweetness. If you don’t like peanut butter, this dish is of course just as tasty with just plain maple syrup, honey, plain butter, or whatever you like on your pancakes.

Step 1:

Cook Bacon

Preheat oven to 400 degrees F.

Lay 7 strips of thick-cut bacon out onto a parchment-lined baking sheet.

When oven is preheated, bake bacon for 20-25 minutes until nicely crisp.

Remove bacon from pan and place on a paper towel-lined plate to drain and cool.

When bacon is slightly cooled, cut into 1-inch pieces and set aside.


Step 2:

Make Batter

In a large bowl, mix together 1 ½ cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and 1 tablespoon brown sugar.

In a medium bowl, whisk together 1 ½ cups whole milk, 1 egg, and 3 tablespoons of melted salted butter.

Pour the wet mixture into the dry mixture and mix until just combined, being careful not to overmix. Some small lumps are ok.


Step 3:

Cook Pancakes

Preheat a large frying pan or griddle pan over medium heat.

Once hot, melt a little butter or vegetable oil in pan and spread around to cover surface area. Spoon large scoops of batter onto your hot surface (about ¼ cup per pancake), making sure pancakes are at least 1/2 inch apart to allow room for cooking.

Set 4 pieces of your bacon on each pancake.

When pancakes are gently bubbling and firm enough to flip (about 1 minute), flip each pancake and cook for another minute on the other side.

Continue this method until all pancakes are fully cooked. If pancakes are browning too much or too quickly, turn heat down a few notches before continuing.


Step 4:

Make Sauce

In a microwave-safe bowl, add ¼ cup creamy peanut butter, 3 tablespoons salted butter, and 3 tablespoons pure maple syrup.

Microwave for 45 seconds on 50 percent power, then stir.

Microwave another 30 seconds on 50 percent power, then stir until fully incorporated.


Step 5:

Serve

Serve the pancakes drizzled with the peanut butter sauce and, if desired, some softened butter.


Bacon Pancakes with Peanut Butter Sauce

Servings: 3-5 (2 to 3 pancakes each) Time: 45 minutes - 1 hour

Ingredients

FOR PANCAKES:

  • 7 strips thick-cut bacon

  • 1 ½ cups all-purpose flour

  • 1 TBS. baking powder

  • 1 tsp. salt

  • 1 TBS. brown sugar

  • 1 ½ cups whole milk

  • 1 egg

  • 3 TBS. melted salted butter

FOR SAUCE:

  • ¼ cup creamy peanut butter

  • 3 TBS. salted butter

  • 3 TBS. maple syrup

Directions

Preheat oven to 400 degrees F. Lay bacon out on a large baking sheet lined with parchment paper.  When oven is preheated, bake bacon for 20 - 25 minutes until nicely crisp.  Remove bacon from pan and place on a paper towel-lined plate to cool and drain.  Once cool enough to handle, cut bacon into 1-inch pieces and set aside.

Step 2: Make Batter

In a large bowl, mix together flour, baking powder, salt, and brown sugar.  In a medium bowl, whisk together milk, egg, and melted butter.  Pour the wet ingredients into the dry and mix until just combined, being careful not to overmix.  A few small lumps are fine. 

Step 3: Cook Pancakes

Preheat a large frying pan or griddle pan over medium heat.  When pan is hot, melt a little butter or vegetable oil in it and spread around to cover all of the surface area. Spoon large scoops of batter (about ¼ cup each) into the pan, leaving about a half inch of cooking room between each pancake.  Place 4 pieces of your cut bacon on each pancake as it cooks.  When pancakes are gently bubbling and firm enough to flip (about 1 minute into cooking), flip pancakes and cook for about a minute on the other side.  Continue this method until all the pancakes are cooked.  If they seem to be browning too much or quickly, turn the heat down a few notches before continuing.  

Step 4: Make Sauce

In a microwave-safe bowl, add the peanut butter, butter, and maple syrup. Microwave for 45 seconds on 50 percent power.  Stir.  Microwave another 30 seconds on 50 percent power.  Stir until everything is well-combined.  

Step 5: Serve

Serve the pancakes served with the peanut butter sauce drizzled over top and, if desired, some softened butter.
